Baked spring rolls!

Easy to make, these spring rolls are fulls of vegetables very finely chopped but without noodles. They were prepared as a quick bite when my son wanted to eat something different. I used all the vegetables I had except the noodles because I didn’t have any!

|Ingredients|

▪ 1 cup finely chopped mixed vegetables of your choice (I used carrots, spring onion, peppers, onion, deseeded tomatoes)
▪ 8-10 sheets of spring roll sheet
▪ 1 teaspoon soy sauce
▪ Salt and pepper to taste
▪ Oil as required

|Method|

▪ Preheat oven to 350F
▪ In a bowl mix all the vegetables and add soy sauce and salt and pepper to taste
▪ Take spring roll sheets and place the mixture towards one end of the sheet as shown in the picture

▪ Roll and seal with water
▪ Grease a baking sheet with oil spray and lay the prepared rolls
▪ Spray some oil on the rolls and bake for 15 mintues turning once in between

▪ Keep an eye after 10-12 minutes as baking time differs from oven to oven
▪ Serve hot with sweet chilli sauce
